Best cheesecakes ever!!! If we do say so ourselves...
Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins with paper liners.
Add melted butter to crumbs, gently mix by hand, and place about 1/2 teaspoon into each paper cup.
Push down with your fingers to create an even base.
Bake for 3-5 minutes.
In a mixing bowl, beat cream cheese, until smooth
Add sugar and mix, slowly, then
Add eggs and vanilla, continue mixing until light and fluffy.
Fill each miniature muffin liner with this mixture, almost to the top.
Bake for about 15 minutes. Check with toothpick, toothpick should be moist.
Cool on wire rack
Top with a teaspoonful of whatever you decide (Ex. Cherry pie filling, blueberry pie filling etc, balsamic vinegar)
