Oven-Baked Focaccia Bread from Garlic's of London

 ¼ cup yeast
  cup sugar
 3 cups warm water
 6 ½ cups flour
  cup salt
  cup olive oil
 salt, olive oil, and fresh herbs for sprinkling

Combine sugar, yeast, and water in mixer and allow to bloom for 15-25 minutes.

Add salt, flour, and olive oil and knead in mixer until a developed gluten window has formed.

Proof for 40 minutes.

Knock back dough and spread onto well-oiled baking sheets.

Sprinkle with salt and herbs, and bake at 500F for 12 minutes.

Using a lifter, slide a cooling rack underneath the loaf and continue to bake for another 4 minutes until golden brown.

Baste with olive oil on tray.
